You can skip Episode 2. It really isn't all that relevant to the main story. There are definitely a few things worth knowing about the film if you choose to skip over it. The other five are pretty essential to watch.

I disagree. Episode II may not be as entertaining as all the other 5 episodes, but in my opinion, it really sets up the events that transpired in Episode III when it comes to Anakin and what not.

You don't HAVE to watch Episode 2 and it's probably better you don't with all the corny lines (stalker Anakin ftw) but there is still some cool characters like Jango Fett and Count Dooku who, unfortunately, we don't see much of in Episode 3. Plot-wise though, there's not really much point watching it.
That fight on Geonosis though.
